Healthy and Yummy!

To my healthy readers:
I would love to hear about your healthy recipes and snack ideas that you use for your kiddos!  I've got 2 delicious super-healthy recipes to share, I would love to get more ideas from everyone!

Protein Pancakes:

-1/2 cup oatmeal
-1/2 cup fat free cottage cheese
-3 egg whites (1/2 cup)
-1 tsp. of vanilla
-1 tsp. of cinnamon or nutmeg or both!

Blend the above ingredients in a blender and make on a pan. I love to add blueberries or bananas to mine. It only needs just a drizzle of syrup, or you could just use some greek yogurt as well as a topping.
These pancakes have a great texture and flavor! So good, and so filling and no white flour!


"Tapioca" Applesauce:
-Equal parts natural/organic applesauce (no HFCS!) and cooked quinoa! 
-I stir in some cinnamon as well.
My son loves this and it's amazing to know my son is getting so much protein and nutrients in a snack that normally wouldn't provide too much benefit.

Any ideas for pudding? My son loves pudding- but what can you do to make it an amazingly healthy snack instead of just an OK snack?  If I come up with more great snack/healthy recipes I will surely post!
